We believe exceptional flavour takes time. We undertake a precise, controlled ageing process. For Lamb, we age for 10+ days, Beef for 55+ days and Venison for 21+ days. This allows the enzymes to enhance tenderness, depth, and richness—a distinction that sets us apart from standard frozen lamb.
